Carabinero Shrimp or Scarlet Shrimp, (Plesiopenaeus edwardsianus), is a large, deep-sea crustacean that’s native from the Eastern Atlantic to the Mediterranean Sea. They are renowned for the jumbo size and very striking bright red color. Prized across Europe, particularly in Spain and Portugal.
Carabinero Shrimp are:

The striking color is present when the prawns are raw and doesn’t fade in cooking. The meat is in the tail, but the heads are valued for making flavorful broths and soups. Their distinct red color does not change when cooked. They are more robust in flavor to most other shrimp and are also coveted for their larger size.
Excellent meat in their tail and its head is excellent for making paellas and robust stews. They can also be served whole.
